Nestled in Northeastern Wisconsin, adjacent to Elton Creek, Silver Moon Springs Hatchery has been in existence since the 1950’s and has been owned by the Winkel family since 1977; now a three generation farm. Bob Winkel purchased the property to expand his mink farming business because it had raceways to raise continued on pg 13 trout to feed the mink. As years passed the trout business grew and in 1992 the mink operation ceased. Today, they are a multifunctional operation raising brook and rainbow trout for stocking, a fee fishing operation and newly expanded
processing plant, selling fresh and smoked trout and salmon along with their own delicious pate’.

Tim Winkel, having grown up with the farm, took over the business after his father passed, expanding it so his two sons, Jason and Jeremy, could join. In 2016 they built the processing building and added a state of the art Kerres Smokehouse, imported from Germany. The programable Kerres smoker is the latest in technology, can do either vertical or horizonal smoking and is environmentally friendly, producing a supreme product. The fee fishing operation has become important, especially this year as families are looking for outdoor activities and to provide fresh fish
for home cooking – “A fun experience for the whole family”.

Tim’s brother, Terry, runs the food retail side, selling smoked trout and salmon in the Milwaukee region at five farmers markets and over 20 specialty food shops throughout the state. Covid 19 has seen a decrease in community events but an increase in farmers market sales. Terry has included a limited home delivery service in Milwaukee where he places the smoked trout in coolers provide by the customer, and picks up the money in an envelope, much like the old milk routes of the 50’s and 60’s. He has two blind customers who order regularly and with these he spends some time with each letting them feel the products and then stickering them so they can tell the difference between each type – Customer service at its finest!
